Bought this packet of Konnnyaku jelly powder a few months ago. Was thinking of making this when my sister and nephew were visiting Ipoh. But didn't have the time and the fridge was pretty occupied most of the time. No space to put the jelly in the fridge! My niece and nephew love this jelly. When I visited them in PJ, we made some together. :)
Well, was craving for the jelly last weekend, and decided to make some with the fruit we had for the day. So, Jackfruit it is! Haha..
The recipe was easy. All instructions were clearly written on the back of the packet. The jelly powder I bought was not flavoured. It suggested to add citrus flavour and colouring, but I prefer to do without those and add fruit as the flavour.
Ingredients:-
1. 1 packet of Konnyaku jelly powder (10g)
2. 950ml of water
3. 200g of castor sugar
4. Chopped jackfruit
Procedure
1. Measure 200g of castor sugar and mix well with the jelly powder. (The packet says 210g, but I cut off 10g since the fruit is sweet. But after tasting, I should have reduce more.)
2. Measure 950ml of water with a measuring cup and pour into a pot.
3. Add the powder into the water portion by portion and stir well to prevent mixture from becoming lumpy. Mine got a bit lumpy though... but it disappear after awhile.
4. Bring the mixture to a boil. Then, turn off flame and stir for another 5mins.
5. Place the chopped jackfruit into the moulds. Unfortunately, I don't have proper moulds at home, so I used cupcake moulds.
6. Transfer the mixture into a glass jar and pour the mixture into the moulds.
7. Allow jelly to set for some time before putting them into the fridge.
7. Leave the jelly in the fridge for a few hours. Remove from moulds and the jelly are ready to be served.
